How do you like your eggs

I am trying to get back into eggs again. I ate so much of them when TTC DS that I got sick of eating them and have only had the odd one or two a week again now since DD2 was born. I was never a great egg lover anyway.

So ideas and inspiration please for eating up to 4 eggs a day as I am not the type of person to eat a hard boiled egg on its own for a snack.

I'm a big quiche girl. It's easy to make mini quiches in jumbo muffin tins. Otherwise, omelettes and scrambled eggs are easy to switch up ingredients to change it up.

I'm in a similar place though. I ate so many eggs when pregnant that I have an aversion to them now!

Is 4 eggs a day necessary though? 1-2 is recommended for boy sways, isn't it?

1-2 is recommended but I think pearl is determined to do exactly as she did before with her first boy sway

If you don't like hard boiled what about soft? So so good when cooked right it's like a fried egg in the go!! My preference has been either the soft boiled or fried eggs. However omelettes are a great way to get onions and garlic in with your eggs! Nom nom!

I am on the 4 eggs a day because I am a vegetarian so atomic recommended the more eggs the better. I think she said 4-6 eggs a day to me last time and I don't think I hit 4 eggs many of the days 3 was my usual. I just thought we could share egg meals while I try to get my egg mojo back. Plus my mum just gave me 3 dozen eggs from her hens and I need to use them too.

Soft eggs just turn my stomach. It has to be completely set for me. I was just saying that I couldn't eat a hard boiled egg on its own without mayo or chilli sauce and with crackers or bread.

I forgot about quiche. I do like them. I also came across a recipe today for a pizza omelette. Cook your omelette like normal in the pan then when set top with pizza sauce, your favourite toppings and cheese and pop it under the grill.

I used to make a casserole with eggs, ham, cheese, and diced potatoes then bake it in the oven. You basically just mix it all together with some milk then pour it into a baking dish. Really easy to make. I also like salads with sliced hard-boiled egg on top. Egg sandwiches are good too with a fried egg (I use water to cook it because eggs cooked in oil grosses me out) then add a slice of cheddar and ham or bacon if you like.

Oh! Carbonara is a good one too. Even if you don't add bacon, using eggs to thicken pasta is a good way to incorporate them without really noticing them

I go through phases where I eat tons of them and phases where they repulse me, so if you are finding you can't do it, I suspect it may be you possibly don't NEED them the way some people do and you're just not into them for that reason.

I am always up for eating some french toast though!!!

My favorite ways to have them are in a soft taco with cheese and salsa for breakfast, as a fried egg sandwich with mustard (this is way better than it sounds), and on a buttered bagel with American cheese.

I also will eat egg salad sandwiches and deviled eggs sometimes, or put hardboiled eggs into potato salad and have them that way.

yes I love to see vegetarians have 4 a day if they can. It's a chore though and if you literally can't choke em down, just do what you can.

I have been having 2-3 eggs most days just fried in butter with a slice of wholemeal toast or some meat but after being eating so many of them since October/November last year I am finding it hard to stomach them as well. This week I am having a break from them & am instead eating a toasted ham & cheese sandwich for lunch. Hopefully I will feel like eating them again soon, I very rarely ate eggs when i conceived my daughters so feel that eggs are something i should try to eat. I am also going to make a quiche or two on the weekend & keep in the freezer.
